Mesquite really is a very versatile ingredient that will add flavor and aroma to surprisingly different types of gluten free and non-gluten free products. The mild cinnamon/coconut/chocolate type aroma and flavor can be achieved by using about 2 rounded tablespoons per cup of dry ingredients. This is often requires a slight increase in liquid to the mixture (often milk). The volume of the muffins, cakes and cookies will be less than recipes with mesquite, but the added flavor is worth the decrease in volume. When mesquite flour is combined with cinnamon, for the first 5 minutes the cinnamon aroma predominates but from about 5 minutes till the product is finished baking the mesquite aroma will predominate. 

The flavor seems especially suitable to Latino products such as meringues, flan, and sweet breads. About 25 years ago in Argentina, mesquite flour was added to the milk for school children instead of chocolate. Today a heaping tablespoon of mesquite flour mixed in hot soy or cow’s milk provides a wonderful aroma and flavor similar to hot chocolate but equally distinct and pleasant.

 

Cocinado con harina de mesquite

La harina de hecha con las vainas  de mesquite, es un muy versatile ingrediente que agrega un  nuevo y sorprendente sabor y aroma a diferentes tipos de preparaciones libres de gluten, asi como  a las que si contienen gluten.

 Agregando 2 cucharada soperas por cada taza de ingredients secos en la preparacion de  muffins, bizcochuelos, galletitas se obtiene un  suave arona  y sabor  a una mezcla  de  canela, chocolate y coco , tal vez se hace necesario agregar mas medios liquidos (leche) para lograr a humedad adecuada de cada preparacion ademas hay que considerer que las preparaciones una vez cocidas pueden ligeraente reducir el volumen. Cuando se combian en las preparaciones  harina de mesquite con canela son horneadas el aroma que se deprende esn los primeros momentos es predominantemente a canela pero le sigue un predomonante aroma a mesquite.

Este sabor  se conbina muy bien con clasicas preparaciones Latinas como los meringues, flanes y panes dulces. En la Agentina se la uso tradicionalmente para agregar sabor a la leche  al estilo de leche chocolatada para  como un sano alimento para los ninos, teniendo en cuenta ese modelo es que tamben se sugiere  gregar  1 cucharada sopera de harina de mesquite a  la leche de vaca o de soja  y calentarla  lo que le otorga un meravilloso aroma y sabor similar al chocolate caliente.


Mesquite meringue cookies (Gluten free).

Ingredients

3 Egg whites

1 cup of sugar (can be less if a less sweet cookie is preferred)

½ cup mesquite flour

½ teaspoon of salt

2 teaspoons of lemon juice

 Mix the sugar and mesquite flour together.   Without stopping, slowly add the sugar/mesquite flour to the egg whites as they are beaten with an electric mixer. Add the salt and lemon juice while continuing to beat the mixture. Continue beating until a consistency is reached, such that when the mixing bowl is inverted the mixture does not fall from the bowl.  Immediately after beating, place the spoon size drops on a cookie sheet with waxed paper (it is preferred that the cookie sheet has holes).  Place in an oven with very low temperature (about 210 F) for about an hour to an hour and a half. Be careful not to let the cookies brown.

Merengues de Mesquite (Sin glutin)

Ingredientes:

3 claras

1 taza de azucar (puede ser un poco menos para que no sean tan dulces)

1/2 taza the mesquite flour

1/2 cucharadita de sal

2 cucharaditas de jugo de limon

Preparado:     

Batir las claras (con batidor electrico), ir agregando el azucar  mezclada con harina de mesquite flower en  forma de lluvia, sin para de batir agredar la sal y el limon, seguir

batiendo hasta que al dar vuelta el recipiente no se caiga la preparacion (eso es muy importante).  Apenas terminan de batir  colocarlos en una fuente con papel manteca solamente (si la fuente  tiene agujeritos mejor). Cocinar a horno muuuuuy bajito, a unos 210 F  en las cocinas electricas.  El tiempo es de mas o menos hora a hora y

media, ojo!!!  no se tienen que dorar.

Mesquite fruit cake.

Ingredients

 7/8 cup butter (200 gram)

1 ¼ cup sugar (250 gram)

¼ cup of cognac

1 grated lemon rind

2 egg yolks

3 entire eggs

1 ¾ cup wheat flour (200 grams)

2 teaspoons of baking powder

4 tablespoons of mesquite flour

 14 ounces of (400 grams) of dried fruit mix mango, papaya, pineapple.

Preparation:

Beat the butter with the sugar until a white cream consistency is achieved. Moisten the fruit and the grated lemon peel with the cognac.  Add the egg yolks and the eggs one by one, while beating the creamy sugar/butter mixture. Mix the mesquite flour with the wheat flour and baking powder in a separate bowl.  Alternately incorporate the dried fruit with the wheat/mesquite flour -baking powder mixture and optional macadamia nuts.  Beat well. Place the combined mixture in a rectangular baking pan that has been buttered and dusted with flour. Bake in a moderate temperature oven until the cake rises to full volume and becomes a golden color.  Remove the fruit cake and allow to cool on wire rack.

Bud’n InglŽs con Mesquite(Con glutin)

Ingredientes
200 gr manteca
250 gr azœcar
¼ taza cognac
1 ralladura de un  lim—n
2 yemas
3 huevos
200 gr harina m‡s 2 cucharadas
2 cucharadas de polvo de hornear

4 tablespoons mesquite flour

400 g de fruta seca papaya, pina, mango

Preparaci—n
Batir la manteca con el azœcar hasta formar una crema blanca. Remojar las frutas y la ralladura de limon. Cuando la manteca este cremosa agregar, mientras bate, las yemas y los huevos uno por uno. Incorporar las frutas alternando con las harina y las nueces macadamia trozado (opcional). Bata bien. Mezclar las dos cucharadas de harina junto con el polvo y agregar. Volcar la preparaci—n en un molde rectangular alargado enmantecado y enharinado. Cocinar en horno moderado hasta que saque panza y este doradito. Desmoldar sobre rejilla.

Mesquite flan

Ingredientes

Flan portion

8 eggs

1 quart of milk

1 cup of sugar

1 cup of Mesquite flour.

Carmel topping.

1 cup water

1 cup sugar

1 Teaspoon of rum

First make the carmel syrup by boiling the mixture a cup of sugar and cup of water until the water evaporates and the carmel obtains a the color of honey.  Add the rum and remove from the burner.

Mix the eggs, sugar, milk, and mesquite flour and place this mixture in a flan mold that has been lined with the carmel.  Bake for one hour at 350 F with a cookie sheet with water below the flan mold.  Remove the flan from the mold. Add water to the mold (after removing the flan), place on a burner on the stove, allow the liquid to boil and concentrate until it becomes a thick syrup. Pour this syrup over the flan. Serve cold.

Flan de mesquite

Ingredientes

Porcion de flan

8 huevos

1 litro de leche

1 Taza de azucar

1 Taza de harina de mesquite

1 cucharado supera de ron

Porcion de carmelo

1 taza de azucar

1 taza de agua

Caramelo:

Poner a hervir an una taza da azucar y una taza de agua  hasta que el agua se evapore y tome color  miel  perfumar con una cucharadita de run  y apagar el fuego , usar este caramelo para acaramelar la budinera

Flan:

Mezclar todos los ingredientes, poner en una budinera acaramelada y hacer cocinar durante una hora en el horno, con una bandeja de agua por debajo o a ba–o de Mar’a en un horno en 350 F. 

Desmoldar al sacar del horno agregar agua a la budinera  hacer hervir hasta que el caramelo se derrita  y se convierta en un almibar  medio espezo. Banar con este almibar el budin.

Hot mesquite milk

Ingredients

1 cup of cows or soymilk

4 teaspoons mesquite flour

1 teaspoon sugar (optional)

Add the mesquite flour to milk and place in a blender until well mixed.

Place in a microwave for 40 seconds.

Leche de mesquite

Ingredientes

1 Taza de leche de vaca o soya

4 cucharaditas de harina de mesquite

1 cucharadita de azucar (opcional)

Agregar la harina de algarrobo hasta la lecha poner en un licuadora para 20 seconds. Poner en un micro onda para 40 segundos.

Gluten free mesquite pancakes

Ingredients

1 ½ cups Bob’s Red Mill gluten free pancake mix

3 Tablespoons mesquite flour.

1 cup of milk(cows or soy).

1 egg.

1 Tablespoon vegetable oil.

Mix the Bobs Red Mill gluten free pancakes mix, mesquite flour, milk, and egg, beat well and let stand until the griddle is ready. Put the griddle on medium heat, add the vegetable oil. Add 2 tablespoons of the mixture to the griddle. When bubbles appear throughout the mixture, turn the pancakes. Continue cooking until the pancakes easily separate from the griddle and have a light brown color. This recipe is a modification of the Bobs Red Mill GF pancake mix in that it includes more milk and mesquite flour.

 

Panqueques de mesquite sin glutin

Ingredientes

1 ½  tazas de "Bob’s Red Mill gluten free pancake mix"

3 cucharado supera de mesquite flour

1 taza de leche (vaca o soya).

1 huevo

1 Cucharado de aceite vegetal.

Mezclar la Bobs Red Mill GF pancake mix, mesquite flour, leche, huevo y batir bien.  Permitir descansar la mezcla por algunos minutos hasta el sarten este caliente.  Usar media/alta temperatura para calentar el sarten, agregar el aceite.  Echar 2 cucharas  soperas de mezcla en la sarten caliente, cuando aparecan pequenas burbujas  en casi toda la superficie de el  panqueques dar los  vuelta y seguir cocinando hasta superficie inferior se deprende facilimente y este ligeramente dorada.  Esta receta este adaptada de la receta de Bobs Red Mill con dos diferencias- este receta tiene mas leche y tiene la harina de mesquite.
