Prosciutto-Wrapped Asparagus

INGREDIENTS:

  • 1 bunch asparagus
  • ¼ pound prosciutto, thinly sliced
  • ¼ cup freshly grated Parmesan
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 1 pinch black pepper

INSTRUCTIONS:

1. Preheat the oven to 400°F (204°C).

2. Trim the base of the asparagus to remove any white or purple from the stem.

3. Toss the asparagus in the oil, salt, and pepper.

4. Cut the Prosciutto in half lengthwise, creating long ribbons.

5. Wrap the asparagus with the prosciutto, starting about one inch below the tip and working down the stem.

6. Place the wrapped asparagus on a sheet pan and cook in the oven for about 10 minutes, until the asparagus is just starting to soften and turn limp.

7. Spread the asparagus out on a serving plate and sprinkle grated Parmesan over the asparagus before serving.
