Roasted Garlic

INGREDIENTS

  • 1 garlic bulb
  • 2 Tbsp. olive oil
  • Pinch of salt

INSTRUCTIONS

1. Preheat the oven to 400 degrees F.

2. Cut the top and bottom off of the garlic bulb to expose the cloves.

3. Place the bulb of garlic in the center of an 8 inch square piece of aluminum foil.

4. Drizzle the oil and sprinkle the salt over the bulb.

5. Wrap the aluminum foil around the whole bulb and place in the oven.

6. Cook for about 50 minutes or until soft.



Roasted Garlic and Herb Aioli

INGREDIENTS

  • 6 cloves roasted garlic
  • 1 Tbsp. tarragon, chopped
  • 2 Tbsp. chives, chopped
  • 3 egg yolks
  • 1 Tbsp. Dijon mustard
  • 1 lemon, juice and zest
  • 2 cups olive oil
  • Salt to taste

INSTRUCTIONS

1. In a food processor, puree the garlic, herbs, egg yolks, lemon juice, and Dijon until smooth and evenly combined.

2. While still pureeing, slowly add the olive oil until fully combined and the sauce has thickened.

3. If the sauce is still too thin, repeat step 2 with a little more olive oil.

4. Once thick and emulsified, season with a pinch of salt and enjoy.

SERVING SUGGESTIONS

Serve as a spread for sandwiches and burgers, a dip for fries or vegetables, or alongside grilled meats and seafood.
